How to Cook Wild Hog for a Crowd Without Ruining It

Practical tips for preparing feral hog meat for large gatherings while honoring the hunt and supporting veterans.

When a group of hunters, veterans and volunteers gathers after a successful hog hunt, the next challenge is turning the fresh meat into a meal that feeds many without losing flavor or texture. The feral hog population costs Louisiana about 76 million dollars in agricultural damage each year, so using the meat responsibly benefits the community and the environment.

Start with careful but simple preparation. Trim excess fat and skin, then consider a brine of water, salt, sugar and a splash of apple cider vinegar for at least four hours. The brine helps the meat stay juicy during cooking and reduces any gamey taste. Pat the meat dry, season with a blend of garlic, paprika, black pepper and a touch of cayenne for heat that matches the Cajun spirit of Acadiana.

For a crowd, low and slow methods work best. Smoke a whole hog shoulder on a charcoal or pellet grill at 225 degrees Fahrenheit for 6 to 8 hours, or roast a large cut in a covered pan at 300 degrees Fahrenheit, basting every hour with a mixture of melted butter and herbs. Keep a meat thermometer handy; the internal temperature should reach 160 degrees Fahrenheit for safety without overcooking.

When the meat is done, let it rest for 20 minutes before pulling or slicing. Serve with classic sides like coleslaw, baked beans and cornbread, and consider donating portions to local food kitchens and veteran families. Sharing the harvest reinforces the purpose of the hunt and helps address the sobering reality that about 23 veterans a day are lost to suicide in this country, reminding us that community meals can be a source of connection and support.
